History
Pastilla, or bastilla, is a pie of very thin warqa pastry, filled with pigeon or chicken stewed with onion, saffron, ginger and cinnamon, a layer of eggs scrambled in the sauce, and fried almonds with sugar. The top is dusted with icing sugar and cinnamon in a lattice pattern. Sweet and savoury at once, it is the classic first course at Moroccan weddings and feasts, and Fez is its proudest city. Many historians connect it with the cooking of Muslim al-Andalus, brought to Morocco by refugees from Spain after the 15th century. Seafood versions are popular on the coast.
