History
Tacos al pastor are a child of immigration. Lebanese families who settled in Puebla and Mexico City in the early 20th century brought the vertical spit of shawarma, first with lamb. Mexican cooks switched to pork, marinated it in dried chillies, achiote and spices, and stacked it on a spit called a trompo, often with a pineapple on top. The meat is shaved onto small corn tortillas with a slice of pineapple, onion, coriander and salsa. Mexico City's taquerías made it famous from the 1960s, and it is now the city's emblematic night-time taco.
