History
Šaltibarščiai is a cold soup of kefir or sour milk coloured bright pink by grated cooked or pickled beetroot, with cucumber, dill, green onions and chopped hard-boiled egg. It is served in summer with hot boiled potatoes on a separate plate. Cold sour soups have long been eaten across the lands of the old Grand Duchy of Lithuania, now Lithuania, Belarus, Poland and parts of Ukraine, but the bright pink kefir version is especially associated with Lithuania. Since 2018 Vilnius has held a pink soup festival every summer, and the dish has become a symbol of Lithuanian summer and a favourite subject of food photos.
