History
Manakish are flatbreads topped and baked, the Lebanese breakfast. The most common topping is za'atar, a mix of wild thyme, sumac and sesame stirred into olive oil; others are white akkawi cheese or minced meat. The name comes from an Arabic word for engraving, after the dimples pressed into the dough with fingertips to hold the topping. In villages, women baked the family's bread in a shared oven in the morning and used the last dough for these. Today bakeries across Beirut and the Levant sell them hot, folded and wrapped in paper for the walk to work or school.
