History
Kazy is a sausage of horse meat, made from rib meat with its fat, seasoned with salt, pepper and garlic, stuffed into horse intestine and then dried, smoked or boiled. It is a delicacy in Kazakhstan, where horses were central to nomadic life and horse meat is still valued for feasts. Kazy is part of the soghym, the winter tradition of slaughtering an animal in late autumn and preparing meat to last through the cold months. It is sliced and served cold or boiled as part of beshbarmak, and it appears on the dastarkhan at weddings and Nauryz, the spring new year. Similar sausages are made by Kyrgyz, Tatars, Bashkirs and Uzbeks.
