History
Galayet bandora, "pan of tomatoes", is tomatoes fried in olive oil with onion, garlic, hot peppers and salt until soft and thick. It is a simple everyday dish across Jordan and Palestine, scooped up with warm flatbread and eaten from the pan, and in many homes it is served with fried meat or eggs. It is especially associated with the south of Jordan and with farm and Bedouin cooking, where it was made over open fires in heavy pans. It needs only a few ingredients and cooks quickly, so it is a staple for breakfast, lunch or camping trips in the desert. Some cooks add lamb or minced meat to make it a full meal.
