History
Jerk is a way of cooking meat that is rubbed or marinated with a hot spice mix of allspice and Scotch bonnet chillies, plus thyme, spring onion, garlic and ginger, then smoked slowly over pimento wood. Its roots go back to the Taíno, the island's first people, and to the Maroons, Africans who escaped slavery in the 17th and 18th centuries and lived in the mountains, cooking wild pig in pits so the smoke would not betray them. Portland parish, especially Boston Bay, is known as the home of jerk. Chicken and pork jerk are sold from oil-drum grills at roadsides across the island.
