History
Masgouf is a carp, usually from the Tigris or the Euphrates, split open, salted and seasoned, and grilled upright on stakes facing a fire of apricot or tamarisk wood, then laid flat on the embers at the end. It is the dish of Baghdad's Abu Nuwas Street along the river, where restaurants keep live fish in pools for customers to choose. The method is thought to be very old, and some writers trace it to ancient Mesopotamia. It is served with flatbread, pickles, onion and a tomato or tamarind sauce, and it is eaten by hand from a shared tray.
