History
Kalakukko is a loaf of thick rye bread with fish baked inside it, usually small vendace (muikku) or perch, with pork fat. The dough is wrapped around the filling and baked for many hours, so the fish bones soften and the juices soak into the crust. It comes from Savonia in eastern Finland, especially the city of Kuopio, and was a practical food for travelling workers and forest work, since the crust kept the filling for days. It is eaten by cutting a lid off the top and scooping out pieces of filling with the crust. Kuopio's market square still sells it, and the city hosts a kalakukko baking competition.
