History
Kokoda is raw white fish, such as mahi-mahi or walu, cut into cubes and marinated in lime or lemon juice until it turns opaque, then mixed with coconut cream, chilli, onion, tomato and sometimes cucumber. It is often served in a coconut shell or a giant clam shell. It is one of Fiji's best-known dishes and is eaten as a starter at feasts and celebrations. Raw fish marinated in citrus and coconut is found across the Pacific, such as 'ota 'ika in Tonga and oka in Samoa. In Fiji the coconut cream is squeezed fresh from grated coconut. Kokoda is served cold, a welcome dish in the tropical heat.
