History
Kitfo is finely minced raw beef, warmed in spiced clarified butter and seasoned with mitmita, a hot chilli spice blend. It belongs to the Gurage people of south-central Ethiopia, and the name comes from a root meaning "to chop finely". It is usually eaten raw, or lightly warmed as leb leb, with a fresh mild cheese called ayibe and chopped cooked greens, and with injera or a thicker bread made from the false-banana plant, called kocho. It is festive food, eaten especially at Meskel, the celebration of the finding of the True Cross, and on other special occasions.
