History
In Denmark this pastry is called wienerbrød, "Vienna bread", which points to its origin. The usual story says that in the 1850s, when Copenhagen bakery workers went on strike, owners hired Austrian bakers, who brought the method of folding butter into dough. Danish bakers then made it their own with more butter and fillings. Many shapes have names: spandauer with a dab of custard or jam, the snail-shaped kanelsnegl, and the long kringle, the pretzel-shaped symbol hung outside bakeries. The pastry spread to the rest of the world as "Danish", and around the world it is the breakfast pastry of hotel buffets.
