History
Moros y cristianos, "Moors and Christians", is black beans and white rice cooked together in one pot with a sofrito of onion, peppers, garlic, cumin and oregano, often with a bit of pork. The name recalls the medieval wars between Muslims and Christians in Spain. Rice and beans are eaten all over the Caribbean, and the dish shows the Spanish, African and Indigenous roots of Cuban cooking, with beans that were native to the Americas. It is the everyday side of Cuban meals and often served with roast pork, the centrepiece of Christmas Eve, Nochebuena.
