History
Empanadas came to the Americas with the Spanish, and every country has its own. Chile's classic is the empanada de pino: a large baked pastry filled with pino, chopped or minced beef cooked with plenty of onion, cumin and paprika, plus a piece of hard-boiled egg, a black olive and a raisin or two. The word pino is thought to come from the Mapuche word pino, a cooked filling. Empanadas de pino are the food of the Fiestas Patrias, Chile's national holidays on 18 and 19 September, when they are eaten by the thousands with red wine, and on Sundays families buy them from bakeries for lunch.
