History
Shopska salad is chopped tomatoes, cucumbers, onion and roasted or raw peppers, dressed with oil and vinegar and covered with a thick layer of grated white brined cheese, sirene. It is named after the Shopi, the people of the Sofia region. The salad is younger than it looks: it was created in the 1950s and 1960s by Balkantourist, the state tourism company, as part of a set of national dishes for hotel restaurants, and its colours match the Bulgarian flag, white, green and red. It caught on quickly and is now the starter at almost every Bulgarian meal, often eaten with a glass of rakia. Bulgarians consider it a national dish, and neighbouring countries serve their own versions.
