History
Pão de queijo are small baked cheese breads, crisp outside and chewy inside, made from cassava starch with eggs, milk, oil and cheese. Without wheat, they are naturally gluten-free. They come from Minas Gerais in the 18th century, where enslaved cooks on farms used the starch left over from processing cassava, rolled into balls and baked, and cheese was added later as dairy farming grew. They are eaten for breakfast or with coffee in the afternoon, and a mineiro will say they should be made with the local cured cheese, queijo minas.
