History
Fuchka is the Bengali form of the crisp, hollow balls known as panipuri or golgappa elsewhere in South Asia. In Bangladesh they are filled with mashed potato, chickpeas, onion, chilli and egg, and served with a sour tamarind water poured in or on the side. The snack spread across the subcontinent in the 20th century. In Dhaka, fuchka carts stand outside universities and in markets, and an evening plate is a social habit, especially among students. It is often shared with friends, and vendors also sell chotpoti, a chickpea dish served with the same tamarind and crisp shells.
