History
Khorovats is Armenian barbecue: pieces of pork, lamb or beef, usually on the bone, marinated with onion and salt and grilled on long skewers over grapevine wood or coals. Vegetables such as aubergine, peppers and tomatoes are grilled too and often chopped into a salad. It is cooked for every gathering and holiday, and Armenians care about the fire and the wood as much as the meat. Pork has become the most common meat in the modern era, though lamb was the older choice. Since 2009, a khorovats festival has been held in Akhtala. It is served wrapped in lavash.
